at the linux prompt you want to type
"linux 3"
where linux is the name of the kernel you want to boot
with.  The 3 tells your system to go to runlevel 3 
(command prompt - multi user)
instead of runlevel 5 (X multi user)
Or if you have X started you can switch runlevels by
doing a "telinit 3" at any command prompt or virtual terminal
(try ctrl+alt+f1 to switch to another virtual terminal 
ctrl+alt+f7 to switch back to X)

You can set the default runlevel by changing the
id:5:initdefault:
line in /etc/initab
to
id:3:initdefault:
