Yes, that's one the easiest- way of doing it. 
You're absolutely right.
But then you end up carrying /if you're not using your laptop in the car/
AC adapter
DC to ac adapter 
that's at least a pound or two for the two of them
and don't forget the looong power cord to your laptop's adapter.

And your battery
With a self made unit
you carry a battery, a connecting wire and the integrated voltage controller
But i would agree that an AC to DC adapter is the easiest way to go.
I wonder how much power is lost that way- pumpung up 12 v to 110 and then 
back to 16 again.
A readymade adapter is usually safer though /or so one would hope/
