What I did was buy a USB enclosure (so I could use the old disk as
a backup drive afterwards), put the new disk in the enclosure, boot,
format and copy stuff across and then swap the disks.

If I hadn't wated an external disk anayway, and not wanted to take down any
of my desktop machines, probably would have done what another poster said
and used a 3.5->2.5 adapter cable and a desktop machine.
